Thanksgiving planning: a timeline from two weeks out to dinner
Last updated:
Thanksgiving 2026 is Thursday, November 26. Hosting it is a project with a hard deadline and one oven. The trick is moving as much work as possible to the days before, and writing Thursday down hour by hour.

Two weeks out
- Confirm the guest count and any dietary needs.
- Decide the menu and who brings what; write it down in one shared place.
- Order the turkey or reserve it at the store; check you have a roasting pan, thermometer and enough chairs.
- Make the shopping list from the menu, split into non-perishables (buy now) and fresh items (buy Monday or Tuesday).
Step by step
- Confirm guests and the menu. Two weeks before: numbers, dietary needs, and who brings which dish.
- Order or buy the turkey. Size it at about 1 to 1.5 pounds per person if you want leftovers.
- Schedule the thaw. Count back one day per 4–5 pounds and put the “move turkey to fridge” task on that date.
- Shop in two rounds. Non-perishables a week ahead, fresh produce two days before.
- Cook ahead on Wednesday. Pies, sauces, prepped vegetables and the table setting.
- Write Thursday hour by hour. Oven times worked back from dinner, including resting and reheating.

Turkey thawing math
A frozen turkey thaws in the refrigerator at roughly one day per four to five pounds, according to USDA food-safety guidance. A 16-pound bird therefore needs about four days — put it in the fridge on the Sunday before. Write that date down now; it is the most commonly missed step of the whole holiday.
Make-ahead schedule
- Monday–Tuesday: fresh shopping; make cranberry sauce and pie dough.
- Wednesday: bake pies, prep vegetables, assemble casseroles, set the table, chill drinks.
- Thursday: turkey, stuffing, gravy, and reheating — the oven schedule matters more than any recipe.

FAQ
How long does it take to thaw a turkey?
In the refrigerator, plan about 24 hours for every 4 to 5 pounds, as recommended by the USDA. Cold-water thawing is faster but needs constant attention.
